After Dinner Figs And Coffee

Whether you’re planning a Da`wat meal or feel like a posh family dinner, here’s a Fig and Coffee flavoured compote that tastes sumptuous even the day after.

• Halal/Vegan • Serves 4+ • 15mins cooking times

Ingredients

  • 4 whole figs
  • 1⅔ cups of freshly brewed coffee
  • ½ cup of honey
  • 1 vanilla pod

Method
1. Wash and quarter 4 figs in a single layer (16 pieces)
2. In a shallow fry-pan add the coffee, vanilla seeds scraped from the pod and honey. Heat and bring to the boil until the syrup is reduced to ¾ of a cup.
3. Prick the fig skins. Add to the syrup.
4. Reduce heat, cover and simmer for 5 minutes.
5. Remove figs and after cooled, pour the syrup back over the figs and leave to rest for 1 hour.

TIPS: Use as a compote, spread on biscuits, or any bread served with eggs as breakfast. Convert to a dessert with Greek yoghurt or vanilla ice cream.
